That being said, I thought, hey, why not FINALLY post that peach butter recipe? I picked a good 15lbs of peaches a few weeks ago and while I made a peach pie and we ate lots of delicious fresh peaches I knew I had to make peach butter again this year. Last year I used a recipe from online that was delicious but for the life of me I could not find it this year so I decided to mash up a bunch of recipes together and see what I got. The result is okay, but not like last year's. I think I let the butter go too long in the crock pot because I didn't have time to can it right when it was ready so it ended up sitting several more hours than I had planned. Now the recipe:
5 1/2lbs fresh peaches, roughly chopped
3T lemon juice
Simmer the peaches and lemon juice for 20 minutes or until the peaches are softened. Add the sugar and cook until dissolved.
Send the peaches through the food mill and put into your crock pot. Prop up your lid and cook on high, mine took 12 hours. Place into hot jars with 1/2" headspace and process 10 minutes in boiling water bath. This made almost 6-1/2pint jars.
